If I would polish my hybrid cover stock CRUX with the step two 1500 grit polished would it be anywhere close to the CRUX PEARL ?

It would be close, but not exact due to the coverstock. Also, keep in mind that pearl covers generally provide good length with a strong snap, whereas hybrids and solids begin transitioning earlier, even with polish.
